The Pink Chocolate “Chocolate Ruby”, 100% natural!

One of Barry Callebaut ‘s chocolate experts worked in his pastry shop in Louviers, Eure, when one of his experiments took an unexpected turn .

This is reminiscent of the story of chocolate express cake who had simply forgotten ivory chocolate in his bain-marie for 10 hours, and who on his return had discovered the beginnings of chocolate blonde.

Nevertheless, we will not know more about this experience which gave birth to the Pink Chocolate, the mystery being well kept!

All we know is that its pink color is obtained without dye, thanks to a special extraction process of cocoa pods selected naturally pink, namely Ruby beans ( or “Ruby” in French).

These cocoa beans come mainly from Ivory Coast, Brazil and Ecuador. And, very importantly, these are non-genetically modified beans !!! Completely natural!

The first challenge was to extract the color of the ruby ​​beans and preserve it in the chocolate.

It will still take 13 years for the group’s French and Belgian workshops to develop a manufacturing process.

It is now kept well secret in a safe , with the exhaustive list of the few people who know it in its entirety.

What is the taste of Rose Chocolate?

Just as the pink color is obtained without dye, the taste of the Rose Chocolate is entirely natural, without added flavors .

But then what taste do these Ruby beans naturally have?

Martin DIEZ, head chocolatier at Barry, describes it like this:

“We really attack in the mouth with something rather creamy, quite sweet , and we will finish with an acidity that is quite intriguing […] that reminds us of the red fruits ” .

Others will say that the Rose Chocolate makes you feel a fresh fruity note of berries.

Barry Callebaut describes it as ” neither bitter nor sweet “.

In short, many promises that really want to taste it ourselves!

When will we be able to taste Rose Chocolate?

Rose Chocolate has been tested in many well-targeted countries for a variety of reasons; in Japan (country very attracted by the new flavors), in China (which represents a strong potential in the world of chocolate), in the United Kingdom (big fan of the innovations) and in the United States (which is the biggest world market chocolate).

But it is in China, in Shanghai, that the Pink Chocolate was officially presented on September 05, 2017.

It will then be between 6 and 18 months before it reaches the Chinese market in order to finally discover its taste and its price to the general public.

No official date yet to know when he will arrive on our side … Snif snif!
